Ingredients
- pork loin : 1 sheet
- 油 : 小さじ1
- Salt (for pork loin) : 適量

Finely chop the onions.

Heat oil in a frying pan and heat over medium heat.
Once heated, reduce the heat to low and sear the fat part of the pork loin.
Sprinkle salt (for pork loin) on both sides and grill the whole thing over low heat.
Once the pork loin is cooked, remove it.
Wrap in aluminum foil to keep warm. -

Add half the butter and melt over medium heat.
Add onions and sprinkle with salt (for onions).
Stir fry on low heat to avoid burning.
When the onions become transparent, add the red wine, increase the heat and bring to a boil.
Reduce heat to low and simmer until thickened.
Taste and sprinkle with sugar and salt and pepper.
Add the remaining butter, turn off the heat and let it melt. -
