- (A)Olive oil : 40cc
- (A) Salt : 小さじ1/2
- (A) Grated garlic : 小さじ1/4
- イタリアンパセリ : 10g
- 黒胡椒 : 適量
- salmon : 2切れ
- salt and pepper : 適量

Grate the lemon zest into a bowl and squeeze the lemon juice.
Add (A).
Season with black pepper.
Roughly chop the Italian parsley and place in a separate bowl. -

Lightly salt and pepper both sides of the salmon.
Add olive oil to a frying pan and fry over high heat starting from the skin side.
Once golden brown, cook for 7 to 8 to 10 minutes over medium heat, turning the pieces.
While the salmon is cooking, mix together the sauce from step 1 and the chopped parsley. -

Point
・Ingredients are for 2 people.
・When grating the lemon zest, do not add the white part as it is bitter.
・You can also use the stems of Italian parsley.
- Italian parsley changes color with lemon juice, so add it just before putting it on the dish to finish the sauce.
・Always grill salmon from the skin side on.
・If the salmon starts to warp while grilling, press it lightly against the frying pan to avoid breaking the salmon.
- Gremolata is a versatile sauce that brings out the flavor of the ingredients.
