- (A)水 : 適量
- (A)酢 : 大さじ1
- (A)塩 : 少々
- (B)醤油 : 大さじ2
- (B)酢 : 大さじ2
- (B)みりん : 大さじ1
- (B)砂糖 : 小さじ1

Peel the skin of the yam and cut it into strips.
Add (A) to a bowl and mix.
Add the yam, wash it, and let it sit for about 5 minutes.
Discard (A), wash the nagaimo with water, and wipe dry with kitchen paper. -

Marinate in the refrigerator for at least 30 minutes. -

・Recipe for pickled Japanese yam in soy sauce that is easy to make by just cutting and soaking.
・When massaging in step 2, be careful not to use too much force as the yam tends to break easily.
・(A) Add enough water to submerge the yam.

・If you like, you can finish it off with shichimi chili pepper or sansho pepper.
