  • 醤油 : 90g
  • みりん : 40g
  • 砂糖 : 30g
  • 米酢 : 50g
  • しょうが : 25g
  • 鷹の爪 : 1本

    大根は軽く洗い、4~5等分の長さに切った後1cm角の棒状になるように切る。
    ざるや干しカゴに広げて、1日~1日半天日干しにする。

    キッチンペーパーで落し蓋をして2時間常温で放置する。
    密閉袋に入れて冷蔵庫で1日漬け込んだら完成

Point

・大根はすが入ったり古くなったりしたものは避け、太くて新鮮なものを使うとよい。
・天日干しを短くしたい場合は細めに切るとよいが、食感が変わってくる。
・天日干しは大根にしわが入って、曲がるくらいになるのを目安にするとよい。
・晴れて乾燥している日に天日干しをするのがおすすめ。
・冷蔵庫で1ヶ月以上保存ができる。
