Ingredients

  • Pork white offal : 500g
  • こんにゃく : 1枚
  • 長ねぎ : 適量
  • にんにく : 2片
  • 万能ねぎ : 適量
  • 水 : 750ml
  • soy sauce : 7.5g (white offal + 1% of konnyaku)
  • Miso : 112.5g (white offal + 15% of konnyaku)
  • Liquor : 75g (white offal + 10% of konnyaku)
  • sweet sake : 75g (white offal + 10% of konnyaku)
  • sugar : 30g (white offal + 4% of konnyaku)
  • ごま油 : 大さじ2
  • 一味唐辛子 : 適量

Procedure

  1. 1) 下ごしらえをする 00:38

    Boil plenty of water in a pot.
    Cut the pork giblets into bite-sized pieces.
    Cut the konnyaku in half lengthwise, then cut it horizontally into 5-6mm wide pieces and place them in a pot of boiling water.
    Peel the garlic and roughly chop.
    When the pot of konjac comes to a boil, remove the konnyaku from the hot water and set aside.
    Add pork giblets to the same pot and boil.
    When it comes to a boil, drain it into a colander and expose it to water.
    Change the water several times to remove the odor.
    Cut the green onions into small pieces and use as a garnish.

    When the ingredients are thickened until you can see the tops of the ingredients in the broth, add the remaining miso.
    Once the miso has melted, turn off the heat and leave it aside until it cools down.

    火をつけて再加熱する。
    焦げないように混ぜながら煮詰める。
    煮汁がなくなってとろみがつくまで煮詰めたら、ごま油を加える。
    ごま油の香りが立ってきたら火を止める。

  5. 5) 盛り付ける 09:15

    器に盛り付け、仕上げ用の長ねぎ、一味唐辛子を振りかけて完成。

Point

・You can use red miso.
・If you simmer with the lid on, the smell will be trapped, so simmer without the lid on.
・If you want to make the white giblets softer, add water and boil for a longer time.
- Even if you add ginger, the flavor will come out and it will be delicious.
・If you leave it until it cools down, the flavors will infuse.
・It is better not to remove more of the scum that appears when there is a resemblance than necessary.
