Ingredients

  • 鶏もも肉 : 300g
  • 酒 : 大さじ2
  • 塩コショウ : 適量
  • 片栗粉 : 小さじ1
  • サラダ油 : 小さじ1
  • (A) Soy sauce : 大さじ1と1/2
  • (A) Mirin : 大さじ1と1/2
  • (A) Alcohol : 大さじ1と1/2
  • (A) Sugar : 小さじ4
  • (A) Water : 小さじ2

Procedure

  1. 1) Prepare the chicken thighs 01:55

    Place the chicken thighs skin side down on a chopping board and cut off any excess skin, tendons and fat.
    Make shallow cuts in the sinewy parts.
    Make light cuts in the thickest parts to open them up and make the thickness uniform.

    Transfer to a tray and add sake, mixing until well combined.
    Coat the entire surface with salt, pepper and potato starch and mix well.
    Marinate at room temperature for 20 to 30 minutes.

    Lightly wipe off moisture from the chicken thighs with kitchen paper.
    Add salad oil to a frying pan and spread it evenly.
    Pull the skin off the chicken thighs and place them skin-side down in the frying pan.
    Cook over low to medium heat, pressing occasionally with a spatula.
    If excess oil comes out during cooking, wipe it off with kitchen paper.
    Cook for 3 minutes until the skin is well browned, then flip it over.
    Cover, reduce heat to low and simmer for about 3 minutes.
    Once the chicken thighs have browned and are cooked through, reduce heat to medium and add step 3.
    Once boiling, flip the fish over, then flip it every minute thereafter and simmer for a total of 2 to 3 minutes, spooning the sauce on top.
    When the sauce thickens it's done.

Point

・One chicken thigh weighs approximately 300g.
- By marinating in sake, salt and pepper, the unpleasant odor of the chicken thighs is removed and they become soft in texture.
- Sprinkling a small amount of potato starch on top will help the sauce stick to the meat better, resulting in a juicy finish.
・Use sake that does not contain salt.
- When marinating, bring to room temperature as putting it in the refrigerator will prevent it from cooking properly.
- Press down with a spatula while baking to ensure even browning all over.
- Time spent soaking at room temperature is not included in the required time.
