Peel the tomatoes.
Cut the chicken thighs into bite-sized pieces.
Remove the stem of the eggplant and cut it into chunks.
Cut the onion into bite-sized pieces. -

Heat a frying pan and add olive oil.
Add the chicken thighs and stir fry.
Sprinkle with salt and black pepper.
Add eggplant and onion and stir fry.
Dice the tomatoes and add to the frying pan and fry.
Add the fish sauce, garlic and chili peppers and stir fry.
Sprinkle with pepper. -
