Ingredients
- Eggplant : 3個
- 塩 : 1.5g
- 豚ミンチ : 150g
- 白ねぎ : 1本
- 生姜 : 1片
- にんにく : 1片
- (A)豆板醤 : 大さじ2
- (A)甜麺醤 : 小さじ1
- 味噌 : 小さじ1
- 水 : 120ml
- 砂糖 : 3g
- ごま油 : 大さじ1
- サラダ油 : 小さじ2
- 醤油 : 少々
- ラー油 : 適量

Finely chop the ginger, garlic, and white onion.
Remove the stems of the eggplants, cut them into bite-sized pieces, sprinkle with salt and rub lightly. -

Heat sesame oil and salad oil in a frying pan.
Add the ground pork and fry until browned.
Once browned, reduce heat and add garlic and ginger to bring out aroma.
Add (A) and mix well with the oil.
Add eggplant and stir fry.
Increase heat to high and add water.
Add the miso and stir fry until the eggplant is cooked through.
Add the white onion and sugar and stir fry.
Pour soy sauce and chili oil over the ingredients and stir fry. -

Point
- It is best to use fresh eggplant that has a firm, shiny surface and sharp spines at the stem.
- You can use grated ginger and garlic from a tube, but finely chopping the fresh ginger and garlic will give them a better aroma.
- If you sprinkle salt on eggplant before cooking it, the moisture will be removed and it will cook more easily.
・Tenmianjiang can be substituted with miso.
・Adding sugar will add richness.
- If you make it as meat miso without adding eggplant and white onion, you can prepare it in advance and store it in advance.
