- 油揚げ : 8枚
- (A) Dashi stock : 250ml
- (A) Alcohol : 50ml
- (A) Mirin : 50ml
- (A) Cane sugar : 大さじ1
- (A) Soy sauce : 45ml
- (B) Rice vinegar : 大さじ2
- (B) Cane sugar : 小さじ2
- (B) Sea salt : 小さじ1/2
- ご飯 : 350g
- 白ごま : 大さじ1
- Cucumber : 1本

Procedure

Preparing the fried tofu

Roll the chopsticks over the fried tofu.
Boil briefly in boiling water (not included in the recipe) to remove excess oil and cool.
Hold between hands to drain and cut in half. -

鍋に1を並べ、(A)を入れて火にかける。
沸騰したら弱火にし、煮汁がほとんどなくなるまで落とし蓋をして煮る。
火を止めて、冷ます。 -

Pour the sushi vinegar over hot, firm rice and mix with a rice spoon, cutting motion.

Point
・The amount shown is for two people.
・We use square fried tofu.
- Rolling chopsticks over the fried tofu makes it easier to open into a bag-like shape.
・You can also use a rolled up piece of cooking paper as a lid.
・Cooking about 1 cup of rice will yield 350g of cooked rice.
- Place kelp on top of washed rice, soak it for 30 minutes, and then cook it until it is firm.
