Ingredients
- Cake flour (for dough) : 40g
- Granulated sugar (for dough) : 6g

- Milk (for dough) : 60g

- Milk (for custard cream) : 200g
- Vanilla pods : 1/2本
- (A) Granulated sugar : 40g
- (A) Whole egg : 1個
- (A) Egg yolk : 1個
- Cake flour (for custard cream) : 15g
- 無塩バター : 15g
- ブラウンシュガー : 適量

Do the preparations

Heat milk (for the custard cream) and vanilla bean in a saucepan.

Make the custard cream

Put (A) in a bowl and mix with a whisk.
Sift in the cake flour (for the custard cream) and mix with a whisk.
When 1 is about to boil, add it to a bowl, mix, and strain through a sieve.
Place in a saucepan over medium heat and whisk until stiff.
Remove from heat and mix in the unsalted butter.
Transfer to a container and cover with plastic wrap.
Once cooled, place in the refrigerator to chill. -

Make the dough

Sift the flour (for dough) into a bowl.
Add the granulated sugar (for the batter), salt, and whole eggs (for the batter) and mix with a whisk.
Add milk (for batter) and cream and mix.
Strain through a colander.
Add the vanilla pod.
Cover tightly with plastic wrap and chill in the refrigerator for about 1 hour. -
