Ingredients

  • egg : Three
  • ホワイトペッパー : 適量
  • 生クリーム : 大さじ1

Procedure

  1. 1) Make the egg mixture 02:14

    Crack the eggs into a bowl.
    Sprinkle with white pepper.
    Mix with the whisk attached to the bottom of the bowl.
    Add the cream and mix.
    Strain through a colander.

    Add oil to a frying pan before heating it.
    Heat a frying pan over low heat.
    Add the egg mixture.
    Use chopsticks to stir the solidified egg liquid around the edges.
    Place the pan on a damp cloth and let cool.
    Heat again and mix.
    Tap the frying pan onto a damp cloth.
    Cool the frying pan with a damp cloth for 10 seconds, then use a rubber spatula to pour the egg mixture down from the edge.
    Lift the front of the frying pan and scrape off the egg mixture.
    Form an omelette and cook.
    Lift the back side and tilt the frying pan.
    Flip the omelet over to seal in the seams.
    Shape with a rubber spatula.
    Flip again.

    Tilt the plate and use the side of the frying pan to serve the omelette and it's done.

Point

- Eggs may contain Salmonella, so crack them on a counter and place them in a bowl.
- Straining the egg liquid through a sieve will give it a nice texture.
・The video uses a modified 18cm frying pan.
- If you are using a treated frying pan, add oil before putting it on the heat. If you are using an iron frying pan, add oil after putting it on the heat.
・In winter, warm the serving plates with hot water (not included in the recipe).
