- Chopped pork : 400g
- onion : 1 piece
- Raw ginger (for seasoning) : 1 piece
- Salt koji : 2 tablespoons
- (A) Soy sauce : 1-2 tbsp
- (A) Sake : 2 tablespoons
- (A) Mirin : 1 tablespoon
- (A) Raw ginger (for sauce) : 1 tsp
- Black pepper : a little
- Shredded cabbage : Appropriate amount

Add salted koji and grated raw ginger to the pork and rub it in. Leave it at room temperature for about 30 minutes to let the taste blend in.

Peel the onion, halve it and cut it to a thickness of about 1 cm. Put the pork in a warm frying pan and fry over medium heat. Fry for about 1 minute, remove when the meat changes color, and fry the onions in the same frying pan.
