Add cocoa powder and cake flour.

Add half the sugar and whisk with a low speed hand mixer for 30 seconds.
Add the remaining sugar and whisk with a low speed hand mixer for 30 seconds. -

Point
・ It is recommended to use chocolate with about 50% cacao.
-Uses a 15 cm x 15 cm square type.
・ Prepare by laying an oven sheet on the mold.
・ Since egg whites are whipped, divide them into large bowls.
・ Put chopped chocolate in a heat-resistant bowl.
・ A 600W microwave oven is used for movies.
・ Add 15 seconds for a 500W microwave oven.
・ After warming the oil, add flour to make the dough soft and moist.
・ Be careful not to overheat the chocolate.
・ While the chocolate is warm, add cocoa powder and cake flour while sieving and mix.
・ If the egg white is whipped too much, it may crack and shrink, so whisk it to the extent that soft horns are formed.
-Preheat the oven to 150 degrees before whipping egg whites.
・ When mixing the dough and meringue, be careful because if you mix too much, it will not swell easily.
・ After pouring the dough into the mold, drop it from a high position and remove the air.
・ When baking the dough, it will crack easily after 30 minutes, so bake while watching the situation.
・ If it looks like it will crack, open the oven door for 3 seconds and replace the air.
・ Immediately after baking, if you drop it from a high position, it will not easily wither.
