Procedure

Make a spicy sauce

(A) Mix mirin, sugar, vinegar and water and heat in a 600w microwave oven for 1 minute.
Add (A) soy sauce, grated ginger, grated garlic, and doubanjiang and mix. -

Cut off the stems of the perilla leaves of (A) and (B), wash them with water, and wipe off the water.

Point
・ You do not have to use chili peppers.
・ For sauce, remove the heat and cool it in the refrigerator for 30 minutes before pickling the perilla leaves.
・ Wipe off the perilla leaves one by one.
-As the chili pepper, a commercially available round sliced chili pepper may be used.
・ If you like, it is recommended to add condiments such as Japanese ginger.
・ If you like, it is recommended to put it on rice with egg yolk.
