- cabbage : 600g
- かつお節 : 5g
- (A)塩 : 小さじ1
- (A)砂糖 : 小さじ1
- (B)酢 : 100～120mL
- (B)蜂蜜 : 大さじ1
Rinse the cabbage under running water, drain and remove the core.
Divide into several pieces and cut into strips.
Place the chopped cabbage in a large bowl.
Add (A) to the bowl with the cabbage, rub it all over, and let it sit for about 15 minutes.
Place bonito flakes in a heat-resistant container and heat in a 600W microwave oven for 1 minute.
After heating, grind by hand into a powder.
Add (B) and mix the whole.
Squeeze the cabbage from 1 with kitchen paper and drain.
Add the sauce from step 2 to the drained cabbage and mix to rub the whole thing together.
・If you like it sweeter, you can add 1 teaspoon of sugar to the sauce.
・If you use apple cider vinegar, you can use Western-style vinegared cabbage with 10g of parmesan cheese instead of bonito flakes.
・When cutting the cabbage in step 1, it will be easier to eat if you shred the part near the core together.
・ After completion, it can be stored in the refrigerator for 4 to 5 days.
