Place silken tofu in a heat-resistant container and heat in a 600W microwave oven for 40 seconds.
Break up the tofu with a whisk, add dry yeast and mix.
Add sugar, salt, and psyllium in that order, and mix each time with a whisk.
Add rice flour and mix everything with a wooden spatula. -

Gather the dough from step 1 with your hands, shape it into a flat circle, and put it back into the bowl.
Cover with plastic wrap and ferment at 30-40 degrees for 40 minutes. -

Spread a cooking sheet on the iron plate and place the dough.
Divide the dough into 6 equal parts, arrange them separately and apply oil to the surface.
Bake in an oven preheated to 220 degrees for about 12 minutes.
Point
・The time required to ferment the dough is not included in the required time.
・When adding dry yeast in step 1, be careful not to overheat the silken tofu, as the yeast will die (30-35°C is the right temperature).
・The firmness of the dough varies depending on the moisture content of the silken tofu.
