Ingredients
- Pacific saury : 2 fish
- 片栗粉 : 適量
- Umeboshi : 1個
- (A) Soy sauce : 大さじ3
- (A) Alcohol : 大さじ3
- (A)Mirin : 大さじ3
- (A)Honey : 大さじ1
- ごま油 : 適量
- ご飯 : 適量
- Shredded Nori Laver : 適量
- (B)Japanese pepper : 適量
- (B) All-purpose green onion : 適量

Procedure

Add (A) to a bowl and mix well.
Pound the umeboshi with the seeds removed, add to the bowl and mix well. -

Process the saury

Cut off the head of the saury.
Make an incision in the belly of the saury and scrape out the guts.
Wash the saury under running water (not listed in ingredients) and remove moisture with kitchen paper.
Cut off the tail of the saury and cut open the abdomen.
Remove the spine and abdominal bones with a knife.
Sprinkle potato starch on the saury. -

Heat the frying pan.
Let's put the rice in a bowl.
Heat sesame oil in a frying pan and fry the saury, skin side down, for 2 minutes.
Flip the saury and fry for 2 minutes.
Turn it over again, lower the heat, and add 1.
Turn the heat up to high, turn the saury several times, add the sauce, and bring to a simmer. -

Point
・We use low-salt umeboshi.
・You can use sugar instead of honey.
・After combining the sauce in step 1, taste and adjust.
・When grating the saury in step 2, it will be easier to process if you lay down newspaper.
・It is best to use a toothbrush when washing the saury under running water.
・If you add too much sesame oil in step 3, remove it with kitchen paper.
