Ingredients
- Shiitake : 100g
- Kintoki carrot : 100g
- Konjac : 1/2 sheet (100g)
- taro : 300g
- Bamboo shoots (boiled in water) : 100g
- Burdock : 100g
- Lotus root : 100g
- Snap peas (silk pods are also acceptable) : 50g

- (A) Sake : 100ml
- (A) Hon Mirin : 50ml

- Liquor : 1 tsp
- Dark soy sauce : 1 tsp
- Lotus root vinegar water : 400 ml of water + 1 teaspoon of vinegar

For shiitake mushrooms, cut off the shaft and make a cross cut.
Cut the konjac into 1 cm width and make a 2 cm notch to make the rein konjac. I'll give it to the boiled colander.
Cut bamboo shoots (boiled in water) into pieces that are easy to eat.
Peel the taro, cut it into bite-sized pieces, sprinkle with salt and wash with water. Boil it in a pot and soak it in water, and expose it to water.
Cut carrots into 1 cm wide pieces to make twisted plums.
Cut the burdock into small pieces and expose to water.
Cut lotus root into 1.5 cm wide pieces to make flower lotus roots. Expose to vinegar water.
Strip the snap peas and boil them in boiling water with salt for 2 minutes. Soak in ice water to drain.
Cut chicken thighs into bite-sized pieces and knead the seasoning with sake and soy sauce.
Drain each material (other than snap peas) well. -
