Ingredients

  • Shiitake : 100g
  • Kintoki carrot : 100g
  • Konjac : 1/2 sheet (100g)
  • taro : 300g
  • Bamboo shoots (boiled in water) : 100g
  • Burdock : 100g
  • Lotus root : 100g
  • Snap peas (silk pods are also acceptable) : 50g
  • Chicken thigh : 1 sheet (200g)

  • (A) Sake : 100ml
  • (A) Hon Mirin : 50ml
  • (A) Sugar : 2 tablespoons
  • (A) Dark soy sauce : 50ml
  • Liquor : 1 tsp
  • Dark soy sauce : 1 tsp
  • Lotus root vinegar water : 400 ml of water + 1 teaspoon of vinegar
  • salt : 1 tablespoon

    For shiitake mushrooms, cut off the shaft and make a cross cut.

    Cut chicken thighs into bite-sized pieces and knead the seasoning with sake and soy sauce.
    Drain each material (other than snap peas) well.
