Owner and pastry chef of Yumemi Kashi, a store specializing in low-sugar sweets.
While repeatedly developing and tasting sweets that use a lot of sugar and flour, he strongly felt weight gain and nutritional deficiencies, and decided to restrict carbohydrates.
I began to dream of realizing low-sugar sweets, and started researching low-sugar sweets.
The first commercial product, "Yume Miru Tameno Gateau Chocolat", won first place in three categories on Japan's largest order information site "Otoriyose Net".
