Prepare the tofu

Divide tofu into 8 equal pieces and place in a heatproof bowl.
Pour boiling water (not listed) until the tofu is submerged and heat in a 500W microwave for 3 to 4 minutes.
Place a wire rack, kitchen paper, and tofu on a baking tray to drain the moisture from the tofu.
Wrap the tofu in kitchen paper, place a vat and a bowl of water (not listed) on top, and let it drain for 30 minutes. -
