Separate the eggs into yolks and whites and place the whites in a large bowl.
Beat egg whites with a hand mixer until white.
Add the sugar in 3 additions, beating on medium speed for 30 to 40 seconds each time.
Once stiff peaks form, reduce speed to low and beat for 20 to 30 seconds to smooth out the texture.
Add the egg yolks and beat with a hand mixer on low speed for 10 to 20 seconds.
Add the milk and mix on low speed for 10 to 20 seconds.
Add the hot cake mix.
Mix with a spatula, scooping from the bottom, until there are no more powdery parts.

Spread a thin layer of oil over the bottom and sides of a frying pan.
Heat over medium heat for 20 to 30 seconds, then place the bottom of the frying pan on a damp cloth for 3 seconds to cool.
Place on very low heat and pour in the entire contents of step 1.
Smooth the surface.
Cover and cook on very low heat for 7 to 8 minutes.
Once golden brown, fold in half.
Cover and cook on very low heat for 2 to 3 minutes.
Flip it over, cover, and cook on very low heat for 5 to 7 minutes.
